RECIPES Spiced Lamb Kebabs

• 2 pounds leg or shoulder of lamb, trimmed and cut into 1 inch cubes
• 1 tablespoon ground ginger
• 1 tablespoon ground cinnamon
• 1 tablespoon ground cardamom
• 1 tablespoon ground coriander
• 1 tablespoon honey
• 1 cup olive oil
• Kosher salt and freshly ground black pepper to taste
• Cabbage-poblano flatbreads (see recipe) for serving
• 1 1/2 cups yogurt for serving



Directions
In a large bowl, toss the lamb, ginger, cinnamon, coriander, honey and oil. Set aside at room temperature for 1 hour.

Prepare a charcoal grill or preheat the broiler. Slide lamb cubes onto skewers, using 3 cubes per skewer. Season with salt and pepper. Grill or broil, turning often, until browned and cooked to desired doneness, about 4 minutes for medium rare. Serve with warm cabbage-poblano flatbreads, wrapping them around the skewers, and yogurt on the side. .
